How Yummy Is This? BLEK!

I am still going strong on the diet with Kaeson. No gluten and no casein. So far, I am doing a bang up job. I have learned to make some pretty decent things from scratch. Most often, I have to combine about 6 different flours mixed with starch and xanthan gum in order to make even simple muffins. I am getting much better and the family will eat most everything without complaining. I have been able to pass off quite a few things as "normal food" to family and friends. We are doing this until we get our second opinion with Kaeson on May 5th.

However, Kaeson has started begging for some of his staples. He loves hot dog buns and macaroni and cheese. I have worked out the hot dog bun situation...kinda. However, the Mac and Cheese thing had me stumped. Until the other day. I ran into this little number at Good Earth. What a bargain at only $3.50 a box. Doesn't it look super yummy. Organic, Dairy Free Mac and Cheese made with Brown Rice Pasta. Vegan, gluten free, soy free, nut free, whey free, casein free, egg free, lactose free, taste free.

Then they have the audacity to put down "comfort food" as one of the benefits. Comfort food my....never mind. Mac and Cheese can't be considered a comfort food unless one of the ingredients at one time could qualify to fit in the dairy family. Oh well, we will see if he likes it. I just had to complain to someone.

A Little Bit Scary

Last evening, I got a knock on my door. It was my neighbor, Chad. Chad asked me if I knew the owner of the car parked in the middle of the street. I looked outside and saw a car parked in the middle of the street with a woman inside. I had never seen them before in my life. He told me that she had been in that same spot, parked in the middle of the street directly in front of my house, for about 20 mintues just staring at my house.

He told me that he had gone up to talk to her and ask her what she needed but that she would not respond to him. So, he went and got his camera and started snapping pictures of the car and the driver. That did not deter her. She just kept staring at my house. That kind of freaked me out a bit. I couldn't find Harvey so, I walked out with Chad and called out to the woman and asked her if she needed anything. She looked at me, simply answered "no" and continued to stare at the house.

I had noticed the car a while earlier. She had caught my attention because of the strange place that she had chosen to stop her car. Right in the middle of the road directly in front of my driveway. I counted it off to her driving a child around for a fund raiser. We tend to get that a lot.

Harvey finally appeared and I asked him if he knew the lady. He walked out and had no clue as to who she was. So, together Chad and Harvey walked up to the lady and tried to get her to talk to them. She wouldn't talk to them, just continued staring at my house. I got a bit freaked out so, I went inside and called the police. Chad made a big deal about my calling the police so that the lady would know that that is what we were doing. I stood just inside my house talking to the police as Harvey and Chad described every detail of the car, the lady and the circumstance to me. She didn't move and kept staring.

After about 10 minutes (where in the world were the police) she slowly started driving away. As she did, she turned to Chad and said, "I like that house." EEEEEKKKK! That still has me wigged out.

If Not Now, Then When

This morning, as I was getting ready for the day, I turned on the TV to "The View." Normally, I would click right past it. Those women drive me crazy. However, today they were interviewing Zack Efron about the release of his new movie, "17 Again," a movie that I want to see. They were discussing a movie offer that he had turned down (the new release of "Footloose") and asked him why in the world he would make that decision. He mentioned that he wanted to start moving in a new direction with his movies and get away from musical type comedies. Whoopie asked him why right now in his life. His answer, to me, was so poignant, "If not now, then when." As much as I can not believe that I am quoting Zack Efron, I was really struck by his words.

I have been thinking about this all day today. I look at my life and see how many times I use the words of procrastination. In a while, later, eventually, sometime, maybe, and someday are all words that I use on a daily basis. I use them when I don't want to get something done immediately, when it is bad weather out on the day the kids want to go to the zoo, when I look at my garage and sigh wishing that I could park in it, or even when I am making my bucket list. I do not like this about myself and it is something that I want to change. If I don't do it now, then I won't do it.

I am going to try to take these words and phrases out of my vocabulary and replace them with dates, times, goals and alternatives. Instead of eventually getting a new dentist, I am going to call tomorrow. Instead of maybe writing a book, I will start keeping a journal of my ideas today. Instead of someday driving down the coast of California in a convertible, I am planning it for June 2012!

I have fallen into the thought that I will have time, someday, for all that I want to do in life. Sometimes, someday never comes. I want to live my life to the absolute fullest now! If I don't do it now, then when will I start?

Easter- A Snapshot

Goals

Most people start off a New Year with a fresh set of resolutions. Well, I decided to skip the whole New Year's resolution thing this year. I figured that since I was going under the knife and would be out of commission for some time, that I would put if off until a later date. Well, apparently my resolution to procrastinate worked better than I had expected. I was able to put it off almost completely.

However, I have since decided that it is about time to start making some goals so that I am able to get my life rolling in a good and productive direction. I work much better if I have a vision and know what it is that I am trying to acheive. A lot are works in progress (the have appeared on previous lists) and others are new to the list.

Recently, I was accused of not being a planner. This statement hit me harder than I thought that it would. I don't like having that reputation. I am going to make a conscious effort to plan ahead and become better friends with my calendar. I am not going to forgo spontenaity or give up flexibility completely. However, I don't think that it will hurt for me to put more thought into the when and where's in my life.

I know that this one seems very cliche. It seems to be on everyone's list. This year though, it is going to be my kicker year for getting into shape. I am done having children, I am healed from my surgery, and my children are to an age where they can entertain themselves for a little while to allow me time to work out. I feel like I don't have too far to go and that the goal is actually attainable. I really enjoy reading. With young children, it seems like finding time to read gets lost with all that "has" to be done. Between cleaning the house, working with the kiddos, running errands, home improvements, trying to work on my business, calling poison control and cooking, there just doesn't seem to be enough time in the day to work in the novels. I am trying to work it in at night before falling asleep but, somedays I only get in a sentence or two.It is no secret that my kids are my life. I really need to spend more quality time. I want to really kick it into gear this year and get out and about with them! They are only little once and I want to take advantage of it!

Oh, am I ever behind on my food storage. I really need to kick this one into gear and get a move on it. My dad puts me to shame. He has an amazing food storage, has a generator hooked up to the house that can run the entire house with power, several alternative heat sources, 500 gallons of water, etc. etc. etc. I could maybe keep my family alive for two weeks. I need to work on adding to mine or move in with my parents!
I am really excited that my designs are getting more popular. The more people see them, the more they are being requested. I am going to get this little boutique idea off the ground and running. I have purchased my web domain and a skeleton of a site is up and running. This year, I will get more items on Ebay and more patterns on Etsy.

Stress can happen to anyone. It seems like it has hit me a little bit more often over the past little while. I am going to learn to take more deep breaths, learn a few more yoga poses, take more bubble baths and not take life so seriously. I just need to think Zen.The other day I was looking around my house and the thought hit me, "When and how did I acquire all of this stupid stuff?" My house is full of all sorts of stuff that I don't need, want, enjoy or even like. So, this year, I am going to take a tip from Oprah's clutter guru Peter Walsh and get rid of 1/3 of everything in my home. Daunting task? Maybe. However, afterwards, I am sure that I will be a much happier person.
If you haven't already noticed, my yard is a little lack luster and leaves a lot to be desired. Quite honestly, I am a bit tired of it. I am going to kick it into high gear (or get someone else kicked into high gear) and get this little piece of potential heaven looking nice and inviting. I love spending time outside and have great memories of playing in my childhood backyard. I want my children to have the same experience.

We all know the condition of the current economy. What a great time to try to improve on the family budget. Now, don't get me wrong, there are a million things that I would rather do. However, I tend to be a little impulsive when shopping. Practicing a little bit more discipline and bettering our budget will only make me a better person...I hope...if I can manage this one.
Along the same lines as the budget thing, I am going to put more of a focus on saving instead of spending. There are some big ticket items that I want to get and the best (and in all honestly only) way to do it to save up for them. I am excited to see if I can do it! Wish me luck!
I am on the eternal cooking learning curve. I enjoy it when I know what I am doing, have the ingredients ready and start early enough in the day. My goal this year is to steer away from take out, frozen convenience foods and spaghetti overload. I am looking forward to challenging myself and making some new, and most likely interesting dishes.

I absolutely love to write. I always keep a notebook in my purse to jot down notes at the doctors office or while waiting to do the preschool pick up. I love to blog and keep several of them going at the same time. It is one place where I have and open forum and can express what I really think. I keep a digital journal. I write down all of the wacky ideas that come to my head in hopes that someday, my children might find me entertaining. This year, I want to get more focused on my writing. I want to do something more that just put it into a blog. I don't know if anything that I write will ever make it to publisher's status, but I would like to try!

Isn't happiness the end all be all of human existence. What are we if we aren't happy? I am generally a very happy person. I have a lot to be grateful for. This year, I am going to make a conscious effort to find the good in every moment and to hold tightly to those that I love. That is what makes life worth living!

Time To Dye

Although this is a holiday tradition that I still do not truly understand, I have to admit, that I am a new fan of it. Up until this year, I have just thought of it as messy and unnecessary. However, my kiddos absolutely LOVED it this year. After reluctantly setting up the table for the evening, I sat down with a heavy sigh ready to start the demanding chore of playing colored water referee. To my complete and utter amazement, the kiddos dove right in and managed to share, have fun and stay relatively mess free.

Even Toad was thoroughly enthralled in the evening. This is his first year dying the eggs. He jumped right in and loved being elbow deep in dye. He however, didn't quite understand the concept of putting them back into the egg holder. He ended up coloring them and then yelling "ball" and throwing them across the room. So, we ended up with about a dozen cracked eggs.

This kept my kids calm, entertained and happy for over an hour. I may make arrangements to dye eggs more often so that my kiddos can get their creative energy out. So, if you end up with a random bowl of potato salad or tray of deviled eggs on your porch, you will know where it came from.

Toad is Growing Up

Today Toad turns 18 months old. I am absolutely shocked as to how fast the last year and a half have gone by. My little guys has turned into a full throttled chunk! He weighs 26 1/2 pounds and is 32 inches high. He is the biggest of the kiddos so far and apparently his growth spurt is not finished seeing as his soft spot is still not closed. He is in the 60th percentile in weight and 50th in height. Just for comparison, Kyra weighs ten pounds more than toad! What in the world happened to my tiny guy!

However, the Sunday after Easter, when you hear the Hallelujah Choir start to sing, that will be because Toad is off to nursery at church! We will see how that goes.

May I Recommend.....

I don't claim to be genius by any stretch of any imagination and lots of you will scoff at the fact that I dared to mention that word. However, I have lived long enough in my 29+ years to find several things in life and will strongly recommend.

*Dr. Shellie Ring- My kids pediatrician. She is by far the most amazing doctor that I have come across. She is personable, entertaining and real. She gives a lot of credit to mother's intuition. She is extremely knowledgable and gives you all of her attention and doesn't rush you through your appointment. My favorite thing about her is that she visited Kelton every single day when he was up a Primary Children's Hospital last year. She also called me several times during the day to see how I was doing. The nurses told me that she was the only doctor that did that and she does it for all of her patients.
*Lori Van Patten- My hairstylist. Now, I know that you all want to know where I get my hair done....not! Well, I have to give kuddos to Lori. My mom introduced her to me a couple of years ago and I have to say, I am never going to anyone else to have my hair done. The first time I went to have her do my hair, I told her to do whatever she wanted (I had a 3 day old baby at the time and thought that anything was better than what I was currently sporting.) I absolutely loved it! She is so nice and does an excellent cut and color. I am not basing this on my own hair but, I have seen others' hair that she has done and they look fabulous! Give her a call. You won't regret it!
*Sonic Burger Happy Hour- My favorite afternoon "get the kids out of the house" treat. We go between 2 and 4 to get the kiddos half priced slushies. When we go I get the Route 44 Diet Coke. If we are getting out to give the kids a break, there is a pretty good chance that I need one too!

*L'Oreal Double Extend Beauty Tubes Mascara- My favorite mascara. Now, I know that I should not be the first one out there handing out beauty tips, but I think that I have finally found all of the right products for me. I love this mascara. Yes, I scoffed at the name as well but the stuff is really good. I have shorter eyelashes and bought this in hopes that it would make them look longer. Well, it does, but that isn't why I like it. The number one reason is: It washes clean off your face with no scrubbing and doesn't leave you with raccoon eyes! That is huge in my book!
*Jaclyn Tapia- My daughter's first grade teacher and an awesome AVON sales gal. She is a phenominal teacher and I couldn't be happier that she is teaching Kyra. I hope that my boys get her someday too. Also, she is a great Avon lady and has her own blog telling you about her great products. As soon as I learn how to do links correctly, I will post it here. Until then, you can find her on the right side of my blog page.

*Brummel and Brown Yogurt Spread- My Favorite Butter. Don't laugh at this one. This stuff is amazing. My sis introduced me to this years ago and I am hooked. I love to butter up bread with this and eat it as a snack. Not so great on my waistline but, oh it is divine.

*La Creme Yogurt- Heaven on Earth! This is the best yogurt that has ever been produced. It tastes like cheesecake. It is one of the most sinfully amazing small luxuries available at the grocery store! Try it and you will immediately agree with me.

*Cream Cheese Salsa Dip- My Favorite Chip Dip. I made this one day and I love it. I can eat the entire thing by myself in one day. I use the low fat cream cheese and eat it with baked tortilla chips. I try to tell myself that it is healthy because technically, salsa is a vegetable. That works! Doesn't it?

*La Jolla, San Diego, California- My Favorite Vacation Spot. Growing up, my grandparents lived in San Diego. We used to travel out every year or so to see them and we would always visit La Jolla. It has become an integral part of who I am. I love it. I have been able to take my children back a few times. I haven't been back since my grandparents passed away but, I want to plan another trip there soon.

*Training Table- My Favorite Eat Out Place. Since we have three very active kids, we don't get out a lot. When we do, we head to the Training Table. Being a creature of severe habit, I always order the same thing. ALWAYS! I really need to branch out. So, if you go there, order the #24 (Turkey Sandwich) with Cheese Fries and Dipping Sauce. Make sure that you ask the gal at the counter to top off the hickory sauce on your dipping sauce. Then, sit back and enjoy your meal. After you go home, check your blood pressure to make sure that you are still alive after this one. There is more salt in those things that you would need in a week. Does that stop me from going??? NO!

*Dyson DC-17- My Vaccuum. Now, I would be remiss if I didn't mention the most amazing vaccuum in the world. I was referred to this one by Sally! I was very hesitant to purchase it considering it was around $600 but, it was money well spent. This is amazing and picks up stuff like you would not believe. I don't know whether to be amazed or grossed out! Tip though, if you decide to get one of these puppies, go to Bed Bath and Beyond. They have the best prices AND you can use your 20% off coupon there and get quite a substantial discount!

*Magic Bullet- What can I say, this thing is just awesome!

Decisions Decisions Decisions

I have had this topic on my mind a lot lately. I thought that I would just throw it out into the void.

Have you ever stopped to think about all of the decisions that we have to make. We make decisions every moment of every day (I am deciding to type this up at 11:30 at night when I really should be going to bed.) Most of the time, these decisions are small, mundane and have no bearing on the eternal outcome of our existance. However, sometimes these decisions, no matter how small they are, do play a part in the shaping of our lives, minds and souls.

In the movie, "Mr. Destiny," Larry gets the opportunity to go back and redo the moment that he has regretted his entire life. This time, he hits the winning home run ball making him a high school hero. That one moment completely reshaped his entire life. Instead of being a normal, middle class, blue collar worker, he is now insanely wealthy, married to the prom queen and living the life of luxury. In the end ***SPOILER ALERT**** he learns that even though his life is absolutely amazing since he hit the ball, he really misses his simple former life.

Now, not every decision that we make could put us in a different situation, make our lives better or worse or change who we are as people. It is interesting to look back at our lives though and think of the chain of events that have led us to who we are now and how we got to where we are. There are moments that we wouldn't change for the world. Adversely, hindsight is 20/20 and there are a lot of things that we would do differently if we had the chance.

If I had a chance to go back and do it all over, there are some things that I would keep exactly the same. There are some things that I would absolutely change. There are some things that I would chance and leave up to fate. Although there really is no room for regret in life, I do wonder.

Things I Would Have Changed:
* I wouldn't have lost contact with roommates.
* I wouldn't have signed up for credit cards just for the free gift.
* I would have changed my major at Ricks.
* I would have learned to throw away earlier.
* I would have said YES a time or two.
* I would have said NO a few times too.
* I would have relaxed.
* I would have seen the writing on the walls.
* I would have taken some advice.
* I would not have put my hair in curlers every day.
* I would have learned the joy of working out earlier.
* I would not have worked at Burger King or Hardees.
* I would not have spent so much money...especially on crafts.
* I would not have moved in with my in-laws while we were buying our house.
* I would not have gotten the cats.

Things I Would Keep the Same:
* I still would have gone on a mission
* I still would have gotten my master's degree.
* I still would have stood up for what I believed.
* I still would have changed my degree the day before graduation.
* I still would have learned to sew.
* I still would have driven my Fiero.
* I still would have become a teacher.
* I still would have had my bonding moment with my roomies in college.
* I still would have had my kiddos.
* I still would have moved to my current house.
* I still would have driven through the terrible storm to see my Grandma. It was last time I ever saw her.
* I wouldn't have missed marriage for the world.

I am sure that there are more but, I am now choosing to go to bed. I don't think that this will have an eternal impact on my foreverhood but, it may affect how I function tomorrow!

Watching Conference With Uncle Derek

Kyra went and spent the second session of Sunday conference at my parents house. Later, when we went to retrieve her, we found that Derek had spent the afternoon at my parents as well. What does that mean? Well, it means that he didn't get to listen to much of conference because Kyra had him doing all of his usual uncle duties: Playing doctor to every stuffed animal that grandma owns, being twirled around the room, and new this year: making clay animals. FYI- Someday he is going to make an amazing dad.

We walked into quite the menagerie of clay animals. I will let you decide who made which ones. The artists are: Kyra, Danza and Derek. Comment and let me tell me who you think did what!

50 Random Questions

Although there are several things that I could be blogging about (i.e. How I was sitting on the 10th row at conference this morning, the cute clay animals that Kyra made with Derek, or the fact that I now know for certain that Kelty got his chubby cheeks and his enormous pot-belly from yours truly) However, I am going to fill out another one of those Random Facebook Tags. I am not a huge fan of putting them out on Facebook, but I do like doing them. So, you are subjected to reading it...or atleast reading the title and then choosing to skip right over the tag. Either way...I am doing it!!

How in the *#@! did that happen? Isn't that why I had a hysterectomy.

Absolutely! Isn't that part of the whole design of love? Am I the only one that watches those sappy romance movies?

4. Do you believe that everything happens for a reason?

Dad Got Me

I didn't post this on April Fool's Day but, I need to post it. My dad got me again. I know, I am just completely naive. However, he was able to pull over another April Fools Day joke over on me. Go Dad! I still can not believe that I am falling for those.

As everyone knows, I love fairies. So does Kyra but that is probably brought on by my semi-obsession with them. On Wednesday afternoon, my dad called me claiming that he had come across a amazing story about fairies. He said that he was unable to copy the link but cut and paste the story and pictures and put them into an email for me.

I found it just incredible. The article talked about a man that had found a mummified fairy as he was walking in the back woods back in Europe. The fairy remains had incredibly detailed features including hair and teeth. I was completely enthralled. It never occurred to me once that my dad could be pulling a joke over on me. It wasn't until I was mentioning it to a friend later in the day that it was suggested that the fairy tale may just be a hoax for April Fools Day.

I reluctantly called my dad, not wanting to offend him by insinuating that his wondrous tale might just be a lie. I asked "What that whole fairy thing a joke?" He started to laugh and asked me how long it took me to figure it out. He showed me the links that he had found and we chatted up a bit. I am glad that my dad still loves me enough to want to trick me and send these jokes my way. However, I am not so pleased to announce that I fall for every darn one of them!

For those of you that are just dying to know exactly what I fell for, here is the link. Enjoy wallowing in my naivety.
